Blueberry Banana Bread

This may be the easiest thing you ever bake!

I am not a self proclaimed baker. I would much rather sauté, grill, or fry something. Banana bread is an exception I make. My grandma makes THE BEST banana bread, but I'm not ready to share that one with y'all yet. This however is my take on it. It's a little more "cake-like" and a little sweeter, which makes it the best dessert.

If you're anything like me, you buy a crap-ton of bananas and they end up going bad mid week because you weren't as healthy that week as you would have liked to be. So what better way to end that unhealthy week then to take something health and make it....not healthy. My grocery store also sells bags of "cooking bananas". These are the ones that have gotten a little too brown for the normal person to eat. 

The secret ingredient for this banana bread is butter milk. I've never tried it with normal milk but trust me. The butter milk gives it a very moist texture. 
You can find small quarts of buttermilk in the dairy aisle. If you have extra, you can make some cinnamon rolls with it. Recipe to come. 

I also love the blueberries. It gives an extra kick of sweetness that just melt in your mouth. You can of course leave them out if you have some aversion to blueberries. 

For this banana bread recipe, I make mini loafs. Bake time is based on mini loafs. If you use a regular loaf pan, just increase bake time to 50-55 minutes or until tester placed in the center comes out clean. 

I use my stand mixer for this, but a simple hand mixer worked for years before I got all high-tech. Just make sure everything is blended well, you don't want lumpy bread. The key to any good batter is blending wet ingredients first, then adding the dry mixture slowly. This lets it become better incorporated and gives a finer texture.

P.S. Only fill your pans half way.... they cook more even and faster that way.

Recipe

Prep time: 15 minutes

Cook time: 40 minutes

1 cup Sugar
1/2 cup Unsalted Butter at room temperature
2 Eggs at room temperature
1/4 cup Buttermilk
1 tsp Vanilla
3 large Bananas
1 3/4 cups All Purpose Flour
1 tsp Baking POWDER
1/8 tsp Baking SODA
1/2 tsp Salt
1 cup Blueberries
  1. Preheat oven to 350℉
  2. Mix together flour, baking soda and powder, and salt in bowl and set aside. 
  3. In your stand mixer, add butter and sugar to bowl and beat until well blended, about 4 minutes. 
  4. In same mixer bowl, add eggs and continue to blend. 
  5. Add buttermilk and vanilla and beat until well blended. 
  6. Add bananas one at a time until they too are well blended. The mix should be thin with some small lumps. 
  7. To wet mixture, slowly add dry mixture while beating until all the dry mix has been added. Blend another 3-4 minutes until everything is fully incorporated. 
  8. Remove bowl from mixer and stir in blueberries gently.
  9. Grease 4 mini loaf pans well. Spoon mixture into pan evenly, about half full. 
  10. Bake for 40-45 minutes or until tested placed in center is removed clean.
  11. Let cool 15 minutes before serving.
